
A healthy and delicious cake!

INGREDIENTS
v Chopped pitted dates 500 grams
v Boiling water 1 cup
v Flour 250 grams
v Baking soda 1 tsp
v Baking powder 2 tsp
v Salt 1/4 tsp
v Margarine 250 grams
v Sugar 200 grams
v Vanilla 1 tsp
v Eggs 4
v Cashew nuts 100 grams
METHOD
v Stir together dates, boiling water and baking soda keep for 2 hours.
v Sieve flour three times with baking powder and salt on to a paper to mix well.
v Cream margarine and sugar together in a basin.
v Add eggs one at a time, beating one minute after each.
v Add flour and mix on low speed.
v Add chopped cashew nuts and cooled date-water mixture alternately to beaten mixture, beating on low speed after each addition till just combined.
v Add vanilla & mix well. Bake in 160 oven for 45 minutes.
